banana buckwheat blender pancakes
these plant-based pancakes have become my go-to pre- and post-workout treat! they're sweetened only with bananas and taste great topped with some coconut whipped cream and berries. makes 2 servings.
1 medium ripe banana (or 1.5 smallish ones)
1 tsp. vanilla
3/4 c. unsweetened almond milk
splash maple syrup
1/2 c. oat flour
1/2 c. buckwheat flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
blend banana, vanilla, almond milk, and maple syrup until smooth. pour into a bowl and add in dry ingredients, mixing until just combined. don’t overmix! allow batter to rest for 10ish minutes, and heat and oil a skillet over medium heat. cook pancakes for 2ish minutes on each, until golden brown on each side. top with fresh berries, banana slices, and coconut whipped cream for a tasty festive breakfast!
