banana walnut granola

this might be my favorite granola recipe of all time, store-bought or regular. it makes your house smell incredible as it's baking and is packed with all of the goods.

ingredients:

- 1 medium ripe banana

- 2 tbsp. melted coconut oil

- 1/4 c. maple syrup

- 2 tsp. vanilla

- 1 tsp. cinnamon

- 1 tsp. salt

- 2 c. rolled oats

- 1 c. walnut pieces

- 1 heaping tbsp. flax meal

- 2 tbsp. chia seeds

- 1/2 unsweetened coconut flakes


process:

in a large bowl, mash the banana. add in the melted coconut oil, maple syrup, vanilla, cinnamon, and salt. stir until well-combined. add in rolled oats, walnut pieces, flax, chia seeds, coconut flakes and mix until everything is evenly coated. spread thinly on a baking sheet and bake at 325 for ~20 minutes, rotating halfway through, until everything’s golden. allow to cool completely before breaking into clusters to ensure maximum crunch. enjoy on it's own, on a smoothie bowl (my sister's favorite way to eat it), or mixed into ice cream!
