black bean brownie bites

i've eaten a lot of "healthy" desserts in my day, and these might just take the cake (or brownie, in this case). i promise you, you'd never know these were made with beans!

makes 12 brownie bites


- 1 15 oz. can black beans (rinsed and drained)

- 1/2 c. granulated sugar

- 3/4 c. cocoa powder

- 1/2 tsp. salt

- 1.5 tsp. baking powder

- 3 tbsp. melted coconut oil

- 2 scoops unflavored collagen

- 2 heaping tbsp. flax meal

- 6 tbsp. water

- 1/2 c. chocolate chips

- 1/2 c. chopped walnuts (optional)


preheat oven to 350 and grease/line two muffin tins. combine the flax meal and water in a bowl and set aside to thicken. in the bowl of a food processor, add in black beans, sugar, cocoa powder, salt, baking powder, coconut oil, collagen peptides, and thickened flax mixture. blend on high until smooth. stir in your mix-ins of choice and spoon the batter into greased muffin tins. bake at 350 until the tops are dry and the edges are pulling away from the sides of the tin (about 20 minutes). enjoy!
