gingerbread peanut butter flax energy bites

a holiday twist on my favorite snack!


ingredients:

1 c. rolled oats

1/2 c. ground flax meal

1/2 c. gingerbread peanut butter (i used wild friends)

1 tsp. vanilla

1/4 tsp. salt

1/4 c. goodMix foods blend 11 (can sub your favorite mix-in—dried cranberries or white chocolate would also be delicious!)

2 scoops unflavored collagen (i used vital proteins)

2 tbsp. unsweetened apple sauce

melted white chocolate (for drizzling)

process:

combine all ingredients except white chocolate in a medium bowl. roll mixture into balls and place on a lined cookie sheet. drizzle with melted white chocolate, allow to set, and store balls in fridge to have on hand as a snack!
