how i like my healthy twix bars

i've made @rachaelsgoodeats healthy twix bars more times than i can count and have it down to a science. here's my recipe for the tweaks i've made to the recipe to get them just how i like 'em (key ingredient: almond extract!)



- 1/2 c. coconut flour

- 1/3 c. almond flour

- 2 tbsp. ground flax

- 1/3 c.melted coconut oil

- 3 tbsp. maple syrup

- 1 tsp. vanilla

- 1/2 tsp. almond extract

- 1/2 tsp. salt


-1/2 c. almond butter

-1/4 c. melted coconut oil

-1/4 c. maple syrup

-2 tsp. vanilla

-1 tsp. almond extract

-1/2 tsp. salt


- 3-4 oz. dark chocolate (or 1/2c. chocolate chips)

- 1 tsp. coconut oil


preheat oven to 350 and line a loaf pan (mine is 9x5") with foil or parchment paper. in a bowl, combine all the crust ingredients. press into loaf pan in an even layer and bake until the edges are golden, about 10 minutes. set aside.

while the crust is baking, make the caramel layer. in a small saucepan, melt together all caramel ingredients, stirring until smooth. pour over the shortbread layer and place into the freezer until caramel layer is solid, about 2-3 hours.

once caramel layer is frozen solid, melt together the chocolate and coconut oil in a small bowl. pour over top of caramel and place loaf pan back into freezer until chocolate is set, at least 30 minutes. slice with a large knife and keep in the fridge. enjoy!
