vegan, refined sugar-, gluten-, and dairy-free, this oatmeal bake is packed with good-for-you ingredients and is easy to make ahead of time, too!
makes 2-3 servings
- 1 medium ripe banana
- 2 heaping tbsp. flax meal
- 1 small zucchini
- 2 scoops unflavored collagen peptides
- 3/4 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 c. milk of choice
- 1 c. rolled oats
- mix-ins of choice (berries, chocolate chips, nuts)
mash the banana in a bowl and add in the flax meal and a splash of water. mix together and set aside to thicken. grate in zucchini to the bowl and add in vanilla, salt, collagen, baking powder, cinnamon, almond milk, and rolled oats. mix it all together, add in fun stuff (blueberries, walnuts, chocolate chips, you name it!) and pour it in a lined loaf pan. bake at 350 for ~40ish minutes. cut and serve with a drizzle of nut butter and more berries on top!
