peanut butter chickpea blondies

these are one of my mom's favorite healthy treats!

ingredients:

- 1 can chickpeas (drained & rinsed)

- 1/3 c. natural peanut butter

- 2 tsp. vanilla

- 1/3 c. maple syrup

- 1/2 tsp. baking soda

- 1/2 tsp. baking powder

- 1/2 tsp. salt

- 1/3 c. chocolate chips + more for topping


process:

preheat oven to 350 and combine all ingredients except the chocolate chips in the bowl of a food processor. blend on high until fully combined. pulse 1/3 c. chocolate chips until just mixed in. spread into an 8x8” greased/lined pan, top with more chocolate chips, and bake for 25 minutes. serve warm with a scoop of vanilla (DF) ice cream if you're feeling ~fancy~!
