strawberry (z)oatmeal bake

packed with protein and naturally sweetened, these oatmeal bakes are perfect for busy mornings and made for allllllll the toppings.


1 c. old-fashioned oats (I used 2 @bakeryonmain oats & ancient grains cups)

1 medium ripe banana

1/2 medium zucchini, grated

2 scoops @vitalproteins collagen peptides

2 tsp. vanilla

2 tbsp. flaxseed meal

1/2 tsp. baking powder

1 tsp. cinnamon

1/2 c. diced strawberries

1/2 tsp. salt


preheat oven to 350. mash banana in a bowl and add flaxseed meal and a splash of water. set aside to thicken. after a few minutes, add in the rest of the ingredients. the consistency should be like thick oatmeal. for me, the grated zucchini added enough moisture, but you can thin out the batter with some milk if need be. portion out into ramekins (this batch made 4) and bake for 20-25ish minutes until edges are set. serve warm with your favorite toppings!
