white chocolate cranberry orange shortbread bars
vegan, grain-free, and packed with all the best holiday flavors! these shortbread bars are inspired by the flavors in the starbucks cranberry bliss bars if you're familiar with those.

ingredients:
shortbread
1/2 c. coconut flour
1/2 c. almond flour
1/4 tsp. salt
1 tsp. vanilla
1/2 tsp. almond extract
1/2 tsp. orange zest
1/3 c. melted coconut oil
2 tbsp. white chocolate chips
2 tbsp. dried cranberries, chopped
frosting
4 oz. vegan cream cheese (i used @kitehill original)
1/2 c. powdered sugar
1/4 tsp. Salt
1 tsp vanilla
1 tsp. lemon juice
1 tsp. orange zest
1/2 tsp. almond extract
melted white chocolate, chopped cranberries, and orange zest (for topping)
process:
preheat oven to 350. line an 8x8” pan with parchment paper. in a medium bowl, combine shortbread ingredients. the mixture will be crumbly. press into pan with the back of a measuring cup until smooth. bake for 10-12 minutes until edges are golden. allow to cool completely before frosting.
to make the frosting, combine all ingredients with a hand mixer until smooth. spread over cooled bars. sprinkle on additional chopped cranberries and orange zest and drizzle with white chocolate. cut into triangles and store in the fridge!
